My Zucchini Noodle Mock Pasta Salad provides all my favorite pasta salad flavors while remaining gluten- and low-carb-friendly thanks to zucchini noodles as the base ingredient!
Since coming up with this zucchini noodle pasta salad recipe, it has been devoured every time! No matter the occasion.
It is an adaptation of my Pasta Salad with Italian Sausage that has long been enjoyed as part of family get-togethers – one without guilt about carbs! That recipe alone would still make an amazing dish; yet each time I have served this low-carb and gluten-free variation on its predecessor I was taken aback at how quickly and enthusiastically people received this pasta salad with zucchini noodles!

Can this Zucchini Noodle Pasta Salad become your basic dish? Certainly! With low-carb zucchini noodles serving as the basis, and Italian Sausage as part of it all thrown in for added flavour – I think so! Plus you have an added option of increasing its volume to suit any personal preferences or add in even more for even greater enjoyment.

Easy strategies for making Zucchini Noodle Pasta Salad: (scroll down for complete recipe with nutritional data.)
Choose either turkey or pork Italian Sausage to brown over medium heat; when done remove to a chopping board for relaxing (some even come packaged together!). (You could purchase bundle deals of 5 sausages for even easier snacking!
While your sausage cooks, combine or whisk basil pesto, purchased vinaigrette dressing and some black pepper (I used Newman’s Private Olive Oil and Vinegar Dressing as it contains less sugar.).
On another plate, prepare two separate substances roasted purple peppers and olives that were to be photographed: pat dry with paper towels before cutting into bite-sized chunks for easier consumption; drain one can of olives; slice enough green onions thinly so as to form 1/4 cup; (it could have gone wrong!) (photography may or may not have taken place.)
As soon as your sausage has reached room temperature, slice into pieces about 3/8 of an inch (1 cm.).
I used two medium-sized zucchini measuring 10 inches long. Cut a shallow slit lengthwise across them so you get short noodles instead of one long long noodle!
My noodles were created using the Spiralizer, however if that doesn’t appeal to you then consider one of three other techniques from my guide “Three Ways to Create Noodles from Zucchini.”
Add zucchini “noodles” directly into a large enough bowl for all ingredients and stir through any dressing (you might not require all of it if your salads require less moisture.)
After adding sausage slices, roasted red pepper strips, olives and green onions, gently combine. Serve immediately or chill; this Zucchini Noodle Mock Pasta Salad was still delicious even after sitting in the refrigerator overnight!

Zucchini Salad with Lemon Vinaigrette | Sugar-Free Mom
Kalyn’s Kitchen presents this recipe of Vegan Zucchini Bowl with Peanut-Sriracha Sauce for easy eating on any diet!
Ingredients
2 Teaspoons Olive Oil for 5 Italian Sausage Links, 12 Oz Roasted Purple Peppers and 6 OZ of Drained Black Olives, 1/4 Cup Thinly Sliced Inexperienced Onions 2 Medium Zucchinis with their Skin, as well as 1/4 cup Basil Pesto Sauce
Add 1/4 cup Newman’s Private Olive Oil and Vinegar Dressing, freshly-ground black pepper for decoration.
Instructions
In a medium frying pan, heat oil to medium temperatures and sear the sausages until all sides have become evenly brown in color – turning frequently (do not rush this step!). Transfer any completed sausage to a cutting board before devouring!
Whilst your sausage cooks, mix or whisk the basil pesto, vinaigrette dressing and fresh-ground black pepper into an easy dressing for salad. Drain your purple peppers using a colander in the sink; pat dry them before cutting into bite sized chunks for assembly.
Drain the olives into an equivalent colander. Thinly slice enough green onions for 1/4 cup, when cool enough slice sausage thinly — about 3/8 inch or just under 1 cm slices are recommended for best results.
Wash zucchini as desired and trim off its ends before cutting lengthwise slits to separate individual noodles.
Use one of Three Methods for Making Noodles From Zucchini and Other Greens; I utilized the Spiralizer with large Noodle Blade for best results.
Put the noodles directly in a large enough bowl for all ingredients. Next, stir in desired amount of dressing until noodles become moistened, before gently tossing through sliced sausage, purple pepper slices, olives and green onion rings.
Serve immediately or chill it for at least 3 hours prior to serving (it was still very tasty after just being in the fridge all day.). Notes
Use turkey or pork Italian sausage, depending on what your preferences are. I used zucchini that measured approximately 10 inches long to complete this dish.
I used my Basil Pesto with Lemon for this dish; however store-bought pesto may also work well in its place.
Newman’s Private Olive Oil and Vinegar Dressing (affiliate link) is one of the lowest-sugar dressing options, while you could substitute any low-sugar vinaigrette in its place.

When keeping carbs to an absolute minimum, using an olive oil and vinegar dressing with only 1 gram of sugar in 2 tablespoons (such as Newman’s Private Olive Oil & Vinegar Dressing from Newman’s Own Olive Oil & Vinegar Dressing I used by Newmans Private) is necessary; use lower fat turkey Italian Sausage instead for your next low carb plan!
